If you have a guest this Thanksgiving that is vegan, don’t freak out just yet. The rule is simple, “If it comes from an animal, they won’t eat it.” This includes butter, eggs, milk, and cream. Okay, so you’re freaking out now because you don’t know how to cook without the needless slaughter or abuse of an animal (Sorry, had to say it). Don’t fret, it’s not as hard as you think.
Most supermarkets sell butter substitutes. Check the ingredients and just make sure it contains no animal ingredients. There are some simple dishes you can prepare for your vegan guests.
String beans : Lay raw, fresh string beans on a cookie sheet. Baste with olive oil, and minced garlic. Heat 15 minutes at 350.
Mashed Potatoes : If you usually use butter and/or milk, substitute Earth Balance Spread and Soy Milk. Make a separate bowl for your vegan guests.
Gravy : This one is easy, use mushroom gravy. You can get it already made in a can if necessary. Beef it up (no pun intended) with some baby portobello mushrooms.
Pasta Salad : Mix tri-color pasta, chickpeas, onion, bell pepper, celery, olives, and Italian dressing.
Desserts can be as simple as mixed fruit, or even a vegan apple pie.
If you want to truly win over your guest, check your local supermarket for a Tofurky. It’s a meatless roast, stuffed with wild rice. It’s very simple to make, and I am sure they will be very impressed. Be sure to check with the store manager about other vegan choices they may have.
Get creative. For example, virtually every store has veggie burgers. Cook up some veggie burgers, smother it in mushroom gravy and you’ve got a vegan Salisbury steak. Some steamed broccoli on the side, and walla!
If you take the time to give it some thought, cooking for a vegan guest is not as difficult as you may think. Take a little time, and I’m sure they will thank you for it.
